PURPOSE OF POSITION: Prepare meals and in-between meal snacks, working directly and cooperatively with the Dietary Supervisor and other cooks. Participate in team efforts to provide total nutritional care to patients, staff and guests.
ESSENTIAL JOB FUNCTIONS:
Prepare meals, snacks and other nourishments for patients, staff, luncheons and guest trays for in-service and special functions in a timely manner. Label, date and deliver as appropriate. Label, date and wrap all food items placed in the walk-in refrigerator. Prepare salad, beverages and optional items for patients, guests and visitors.
Check diet chart according to patient cart set-up. Set up patients’ trays according to nutritional needs and daily diet charts from the patients’ chart or as directed. Check patient charts with nursing staff on current diet changes prior to lunch and dinner meal preparation time. Check for any special requests from nursing staff.
Wait on visitors, guests, staff and cafeteria tray-line service. Record meal census for breakfast, lunch, and dinner plus any special meals served for meetings. Total in-coming revenue during staff/guest serving times and complete daily staff charge sheets.
Set up conference room or other specified areas for luncheons or special meetings.
Clean carts and equipment and perform dishwashing procedures. Clean cafeteria carts and tables. Sanitize dishwasher according to cleaning schedule or as directed. Perform general cleaning to maintain safety and sanitation standards. Remove and properly dispose of garbage as needed. Bag department laundry for cleaning by others.
Submit grocery and meat orders as vendors call or arrive for orders. Check-in groceries and supply orders and rotate grocery deliveries. Discard out-dated food products. Stock shelves and supplies in dietary kitchen and cafeteria. Place MSDS stickers on items as needed.
Complete various forms, records, check sheets, and requisitions as needed. Record daily temperatures for appliances and meals.
Attend department and hospital meetings and in-services.
Maintain cooperative and collaborative working relationship with hospital staff, patients, other organizations, and the public to provide quality customer service in a courteous manner.
Maintain work areas in a clean, orderly and secure manner.
Follow all safety rules and procedures for work areas.
JOB QUALIFICATION REQUIREMENTS:
MANDATORY REQUIREMENTS: Knowledge of food preparation and handling techniques and food safety requirements, basic math skills, general record keeping methods, ability to read and write in English language. Equivalent to a high school education, or any satisfactory combination of experience and training which demonstrates the knowledge, skills and abilities to perform the above duties.
SPECIAL REQUIREMENTS/LICENSES: Must possess Oregon Foodhandlers card within 30 days of appointment.
DESIRABLE REQUIREMENTS: Previous cooking experience in an institutional or similar environment. Possession of Oregon Foodhandlers card at time of appointment. Knowledge of basic computer skills, or ability to learn.
